The Perfect Summer Rice Salad

Looking for a perfect summer side dish that’s equal parts healthy and delicious (and even vegetarian)? We’ve got you covered! Cahokia Rice is the perfect ingredient for a delicious summer rice salad.

This colorful recipe is easy and quick to prepare, and sure to win you “best side dish” at every pool party, holiday, or sporting event watch party.

Ingredients:
4 cups cooked long grain Cahokia rice (brown or white, to preference)
1 ½ cups whole kernel corn, drained
1 medium carrot, diced
1 medium celery stalk, diced
½ green bell pepper, diced
½ cup mini sweet peppers, diced
1 medium tomato, diced
1 cup broccoli, diced
5 large mushrooms, diced
1 teaspoon salt
1 teaspoon italian seasoning
1 teaspoon ground black pepper
1 teaspoon garlic powder
½ teaspoon onion powder
¼ cup olive oil
1 tablespoon lemon juice

*TIP: replace Italian seasoning, onion & garlic powders, and lemon juice with Cajun seasoning and lime juice for a spicier alternative! Garnish with fresh parsley.*

Prep:

  1. Cook Cahokia rice according to package
  2. Chop vegetables to approximately the same size
  3. Combine ingredients in a large bowl while rice is hot
  4. Serve warm or cold
  5. Enjoy this diabetic and vegetarian-friendly summer side dish!
