A Traditional Christmas Dessert: Glorified Rice

'Tis the season to party! Whether it’s your office Christmas party, you and your friends getting together before the holiday or going home to be with the family, every party revolves around food! If you’re tasked with bringing a holiday dish to the party and don’t want to spend hours in the kitchen or pick up something store-bought, well hang on to your stockings because we have a great, simple dessert dish that will certainly be a big hit!

A traditional dessert salad in the Midwest, Glorified Rice, is a light, sweet treat and super easy to make. Here’s what you’ll need:

Whipping Cream

Vanilla

Sugar

Crushed Pineapple

Mini Marshmallows

Cahokia White Rice

This dessert needs time to chill in the fridge, so be sure to make it a few hours before heading out to the party!

1 cup whipping cream

1 teaspoon vanilla

2 tablespoons sugar

1 can (14- to 16-ounce) crushed pineapple

10 to 12 marshmallows, quartered, or 40 to 50 miniature marshmallows

3 cups cooked Cahokia white rice

In large bowl, whip cream. Add vanilla and sugar. Add pineapple with liquid, marshmallows and rice. Mix well. Refrigerate until chilled.

Makes 10 Servings

You can add fruit cocktail, strawberries, blueberries, or anything you’d like!  Pro-tip: Although the traditional recipe calls for whipping cream, Cool Whip works just as well. Be GENEROUS with the Cool Whip!  You’ll thank us!
