Naturally High Protein Rice No-Bake “Truffles”

•1 cup raw almonds chopped
•12 dates pitted and roughly chopped
•2/3 cup shredded unsweetened coconut
•2/3 cup High Protein Cahokia Rice

•3 oz semisweet/bittersweet chocolate
•3 tbsp coconut oil


In a food processor, combine the almonds, dates, half of the shredded coconut, rice, semisweet chocolate, and coconut oil. Pulse until the mixture together. Add up to 1 tbsp more coconut oil if necessary.
Next, roll mix into balls about a tablespoon in size. Place extra coconut in bowl and roll each truffle-ball to coat. Place in the refrigerator for one 1 hour until firm.
